The 63 hectares of Santomè vineyards are all in the province of Treviso – home of Prosecco – and 27 of them are dedicated exclusively to the production of 3 different types of Prosecco.
100% Glera grapes are hand harvested from 'Bosco Coste' hill on clay soil in Conegliano-Valdobbiadene DOCG zone. Stainless steel tanks fermentation with no MLF. Yeast is added to allow second fermentation in a pressurized tanks "Charmat method" to create bubbles.
Pale lemon colour with creamy bubbles. Complex aromas of fresh pear, apricot, delicate flower and bread of crust and yeast. Rich to the taste, well-rounded with elegant acidity, sapid, dry with a long, persistent finish.
Pair with fried fish, white meat, spinach and ricotta-filled tortelli and fresh cheese.
